Vampiro Juice
1: 2 apples, peeled, cored and roughly chopped
2: 2 carrots, scrubbed clean, topped and roughly chopped
3: 2 beetroots, scrubbed clean, topped and tailed and roughly chopped
4: juice of 2 limes
5: 25g peeled and finely grated fresh ginger
After the late shifts in a bar I ran in Mexico City, I needed something uplifting, and this
vibrant blood-red beetroot juice was just the thing. We now serve it at Wahaca; the
colour is incredible.
